Kolbulle – Traditional Swedish Pancake (2–3 servings)
Ingredients
4 dl water (about 1⅔ cups)
2 dl wheat flour (about ¾ cup)
1 tsp salt
150–200 g salt pork or cured pork belly, diced
Butter or pork fat for frying
Lingonberry jam for serving (optional but traditional)
Instructions
Prepare the batter
Whisk together the water, flour, and salt until you get a thin batter (thinner than regular pancake batter).
Fry the pork
Fry the diced pork in a cast-iron skillet until crispy. Leave the fat in the pan.
Add the batter
Pour the batter over the pork, spreading it evenly.
Cook slowly
Fry over medium heat until the bottom is golden brown and the top has mostly set.
Flip the pancake
Carefully flip the kolbulle (or cut it into pieces and turn them). Fry until the other side is also golden brown.

Serve hot
With lingonberry jam
And preferably coffee brewed over an open fire ☕?
? Tips
When cooking over an open fire: use plenty of fat and lower heat
For extra crispiness: cook longer at lower heat
Traditionally, only water is used, no milk
